French Onion Soup

Any kind of soup that include some toasted bread, a good layer of Gruyere and a tangy/sweet broth is a winner in my book and my French onion soup is very easy to prepare.
The most important step is the caramelization of the onions which will bring out the sweetness in them. You have to take your time, it takes at least 40 minutes to get the proper browning. Also I use coconut butter instead of olive oil to saute the onions, it give an extra dimension to the soup.
So let's start cooking!

Ingredients :

  • 4 large yellow onions
  • Coconut butter {a little to saute the onions}
  • 2 garlic cloves, minced
  • 6 cups of beef stock {I usually use low sodium broth}
  • 1/3 of a cup of dry Vermouth or white Wine
  • 1 teaspoon of herbe de provence 
  • 1 sprig of thyme
  • salt and pepper to taste
  • few slices of French Baguette and some grated Swiss Gruyere 

Method:

In a large saucepan saute the onions in the coconut butter on medium high heat with the herbe de provence and the sprig of thyme.

When well browned {about 45 minutes} add the garlic on the side and saute for one minute.

Add the beef broth

Add the Vermouth or Wine. Partially cover and simmer for 50 minutes {allow the flavors to bend well}

Sprinkle the French Baguette's toast with the cheese

Place into the broiler for five to ten minutes {they will come out like this}
